Red Rice

The weather is cooling down here and we are finding that we are wanting to eat more comforting meals. And red rice is one that we always go back to. It is really simple to make and can be eaten on its own as a meal or added alongside your favourite meal.

We love eating it with charcoal chicken, salad, salsa and of course our tortillas. This recipe is a Juarez family recipe and you can simply adapt it to your own tastes.

INGREDIENTS

1 cup rice
2 tomatoes
1/4 onion
1 garlic
a handful of frozen peas
1 carrot finely diced

Instructions

Blitz tomato, onion and garlic to make a paste.
In a large frying pan with a good drizzle of olive oil fry the rice until brown, it must go brown – it makes it taste so much better.
Have a 2 cups of hot water ready sitting to the side.
Once the rice is brown add the tomato mixture, give it a quick stir and then add the hot water to the pan.
Add a sprinkle of salt and a sprig of parsley. Then add frozen peas and diced carrot.
Put the lid on and cook using the absorption method.
