Blitz tomato, onion and garlic to make a paste.
In a large frying pan with a good drizzle of olive oil fry the rice until brown, it must go brown – it makes it taste so much better.
Have a 2 cups of hot water ready sitting to the side.
Once the rice is brown add the tomato mixture, give it a quick stir and then add the hot water to the pan.
Add a sprinkle of salt and a sprig of parsley. Then add frozen peas and diced carrot.
Put the lid on and cook using the absorption method.
